How to use it

Use it for steak, halloumi, or vegetables when you want char without going outside. Heat it dry until it's smoking slightly before anything goes in — that's what gives the marks and the crust. Wipe out any excess oil after cooking and never leave food sitting on it after the heat's off, or it will stick.
